Cheesy spinach dip..

I know you may think “EWWW she’s using Velveeta?!”, but this is yummy. Very creamy, quite delish!

1 pkg (10 oz) frozen chopped spinach, thawed and drained well (otherwise the dip gets too runny)
1 lb Velveeta Cheese cut into 1/2 inch cubes (I used the low fat kind)
4 oz cream cheese (I used low fat)
1 can (10 oz) Spicy Rotel tomatoes, undrained
8 oz bacon, crisply cooked and crumbled

Combine all except bacon in microwaveable bowl.

Cook on high about 5 minutes, stirring every few minutes.

Sprinkle bacon on top and serve with scoops! 🙂
