Crab on cucumber appetizer

I had this at a good friend’s house quite some years ago. It was delicious and I had to get the recipe!

I made it for the baby shower I recently hosted and it was delicious (if I must say so myself!)

Here you go:

1 Tbs and 1 tsp good quality mayonnaise
1 Tbs finely chopped scallion (green onion)
1 Tbs finely chopped fresh cilantro
2 tsp fresh lime juice
1/8 tsp salt
pinch cayenne pepper
1/4 pound lump crabmeat (picked over for shells)
1 seedless cucumber, peeled, and sliced into 20 (1/2 inch thick) slices **I like to run a fork down the outside of the peeled un/cut cuke, so it looks “pretty”.. LOL

Combine mayonnaise, scallion, cilantro, lime juice, salt, and cayenne in medium bowl. Fold in crab meat.
Spoon about 1 tsp on each cucumber slice.

Serve at once!
